I was new to this idea this year and pretty much have as you described. 1000w Jackery, 105Ah LB which charges from the van only. I have a folding portableGetting a portable power station is never a waste.
It's somewhat plug and play for the van, it's removable to use elsewhere, and holds a resale value.
And yeah in time can be used as a fast charge for a lithium battery (I do that with a Jackery).
Honestly if I was starting from scratch I'd go for a higher end power station (something that can output 1000w on 240v) first and then in time build in a more standard leisure battery set-up.
200w solar panel to charge the Jackery. Van Interior lights run off LB along with USB charging. Portable fridge and anything else from Jackery (which can also be charged or maintained via elec. hook up if needs be).
