We have the discover media headunit in our 18 plate.

How easy is video out? What are the connection options? Is it hdmi or vga and where do you ge connector?

see most people go for ceiling mount as opposed to headrests.

Has anyone done mini projector?

There are no video outs, its not a media player and doesnt accept DVDs etc
I think the ceiling mount options you have seen are probably self contained units that handle their own video sources (cards/usb sticks/dvd etc)
