Tyre Choices on 18s

Having a hard time deciding on a new set of tyres - on 18inch wheels lowered 65mm front and 35mm rear on Twin Monotube Project Comfort.
Based in Cornwall, so rarely get any snow and ice, if ever - campsites in the summer months, but probably 2 or 3 days a year on a potentially muddy field. Looking between the Continental Premium Contact 7, the Allseason 2 or the Cross Climate - I'm happy to get towed out of a muddy field once a year if that's a compromise for improved ride quality, handling and safety, which is the most important. Therefore leaning towards the Premium Contact 7s, but would love any advice/experience from anyone running any of the above (or any other suggestions)

To make it more complicated, I'm also considering putting 17" wheels on at some point, but not sure when that would be, so don't want to risk going for something cheaper and not end up changing for months.

The tyres you mention are all good quality products and I honestly doubt that in real world driving you'd notice any difference in ride quality, safety and handling between them.
I've got 235/55/18 Michelin Cross Climate 2's on my T6 and I'm very impressed with them, however I haven't tried the other brands that you mention so I won't suggest that the Michelins are better or worse.
