Not correct. Some exhaust temperature sensors have had their lower limit +75 C.Is it correct that IDE07712 reads so high both in use and when on ignition only (cold)?

Obviously the sensor is somehow faulty - having a significant offset? Surely worth to replace (as triggers a fault).
Difficult to estimate correctness as exhaust gases right off the engine are fairly hot anyways, especially if the engine was still starting a DPF regen. Also the log is too short to catch possible glitches (between 0 and 300 seconds).Today = 321C after 5 mins.
Have you synchronised van's clock and VCDS PC clocks as recorded fault time in the log is 17:01:04 and VCDS log at 300 s is 18:02:06 (obviously van is still in standard time).
It seems that indeed the fault freeze frame data was captured at 300 seconds but quite possibly actually missed the triggering "implausible signal" - possibly sometime well before 300 seconds.
Makes me think that you shutting engine off before 300 seconds inhibits the fault suggests the glitch happens only quite early
Would be interesting to capture actual sensor voltages by recording the following + a selection of yours
