Oil Service .......

my oil service warning has been counting down but as I’m so busy I’ve not had a chance to try to book it in with VW

So my question is, can independent dealers do this and reset the counter?

yes (a decent garage will be able too), and your warranty should stay intact if you keep all the receipts that show all genuine parts are used.

though in the past iv just booked it in with VW anyway albeit a few K miles late. (well 5k miles late one time!)

depends on how much you trust your 3rd party to work on your van.
