T28 Startline Wheel Upgrade

Hi all.
I have a 2015 T28, Startline, which is being lowered by 30mm and converted to a day van with sliding rear seats.
One of the things I want to do is to change the wheels / tyre combination, from standard to 18" wheels. As I understand anything bigger will be too hard a ride, but I have very little idea of tyres etc.

On many weekends, the van will be used in fields, so will have to cope with grass / slippery stuff.

Wanting to stay legal and not alter the speedo readings, I understand 255/45/18 is the correct wheel size.

What tyres do you recommend for general purpose and coping with fields?, I can not afford dedicated summer / winter tyres

Size wise, you can fit 235/50 18 to a T28.

What impact will this size have on ride looks, etc. I'd prefer the tyres to just sit outside the wheel rim. to avoid the rims being bashed on the kerb, whilst parking
