So......... T6 has been delivered to the converters and I’m about to spec it up. My question is do I get the converters to do everything or would it be cheaper to do some (less important) things at a later date. I’m thinking stereo/nav/reversing camera, Fiamma awning, TV, etc. Thanks in advance

The stereo and nav can be done anytime and I don’t see an advantage of doing while it’s being converted unless you want rear speakers put in.
If you want a reversing camera it makes sense to do that during the build as they may seal up a cable run to the rear which would make fitting it later a right pain.

I sourced the Fiamma at a discount over what the converter quoted then got the converter to fit with my saving....
