DayVan Storage Space Condundrum

Hi guys, I'm thinking of buying this T6 day van. It's a great van but not much available space due to the full width RIB bed. Was thinking of a small kitchen pod housing a fridge and burner (no sink). Any suggestions or bright ideas?

I'm planning a day van conversion. We had a folding camper for a year or so and never cooked or washed up inside, so I have got a field kitchen and I'm planning on buying a wheeled storage container that will be lashed in place.

We already have a powered cooler, so again this just going to be lashed in place.
