I’ve just removed the glove box to retrofit a new head unit and these cables were cloth taped together behind it and run up the A pillar. Any ideas what they are and their potential uses please?
Power and ground are obvious. The RCA is an AV type connector, so that'll be for carrying an audio or video signal. As theres only one id guess video rather than audio, so my guess would be for a camera of some sort.

Cheers for the reply treat me like a novice! Could I run a 12V socket from the power cable (any other ideas welcome) and where would I connect it to a power source?
If the 12v line actually has juice going to it you could indeed run some kind of socket from it. A multimeter will tell you if there are any electrons there.
