Warranty void!

Sometimes the ACC and stop start errors can attributed to a low voltage battery. I've never seen anything mentioning the sensors in the mirror being the issue.
If there WAS an issue with the mirror sensors then the fault would have appeared straight after you installed the mirror and not months down the line so I think VW are thowing you a red herring here.
If possible, as a first attempt at fixing the issue, disco the battery from the van and charge it overnight then take it for a run the folliwng day.
Also, have you got your own carista dongle or OBD11? If so, run a scan and post the fault codes here.

No, this set up is better. Because AutoVox supply the mounts to shroud so takes away strapping it to existing mirror
I an not quite sure I understand, does that mean the one removes the original mirror and this just pushes in place and does it then require any coding in?

How did you get power & video to the mirror? I ask because I had a problem with a van that someone had removed the RV mirror & disturbed the wiring for the RLS sensor which is behind the plastic cover in the roof, just above the mirror. It was a simple plug it back in job.
Of course, it might be a totally unrelated problem to the mirror.
Cables that come with mirror. Hidden behind ceiling panel. And threaded behind pillar.

Contact Auto Vox customer services. Tell them you need the mount for your tranny. Sometimes they'll send it for free. You need it to attach their mirror as it is the same design as the factory.

No coding

Thread 'ĤELP! Front assist unavailable, ACC unavailable etc' ĤELP! Front assist unavailable, ACC unavailable etc

Posted codes here. Yes, Carista dongle. I knew all the information and VW validated it for £138

Just read that thread but I'd still charge the battery fully 1st just to rule it out.
If that doesn't fix it then I think @Pauly's suggestion to check the radar is the next logical step.

My question is why the radar? A 2 year old van and I have a fault possibly linked to the radar? Meaning the whole bumper needs removing. It surely is VW fault. A common design fault or something. It's so frustrating when you fork so much money out you are forking out more for a vehicle that's still under warranty

The VW report states lost comms with front radar due to after market front bumper bring fitted.

That will stop acc from working.

Without a detailed fault scan, you can be easily mis-led. I recently had a front assist/ACC/ESC/TPMS/Headlight Control fault. Non of these were real, it was all down to a faulty wheel speed sensor.

Yes, bloody sensors again which a top diagnostic machine should be able to detect and point to. Lost communication in my case is what? Pull off the bumper to see if their are loose wires 🤷🏼

VCDS is the main diag tool.

You might need to find a local place to do a scan. (A vw Indy)

46% Battery charge level reading on Carista dongle. Before I switched engine on I looked at a live feed and was showing 46%. I mean that's lower than half. It was slowly going up as I was driving to 66%. But what reading would be normal?

12.4 and above. Could be a bad battery and could be the cause of your issues.
Take it off the van. Charge it for 24 hours. Back on van. Test again 24 hours after that. If it's low again then the battery needs replacing although it shouldn't as your van is only 2 years old!

It is holding over 12V. I just thought the battery charge level was low at 46%

Carista says 11.7v? Have you charged it since and how far over 12v is it now?

My recommendation would be to go for a free battery test somewhere.
This was the readings before starting the engine for the first time today. It was over 12V when Engine running. I'm just wondering if the ACC was knocked offline back in May. Needs to get back online but if battery is low then won't reset until fully charged. Maybe battery needs a check. I might take it to a garage who can carry out a check then again I've a multimeter here. I'm just curious to why charge level only showing 46%

Does sound like the battery. Mine is over 12v at rest and 14.4v when the van is running.
