Temp gauge dropping when heater speed switched on. Cheers

That’s normal with any vehicle.

It dropped all the way back to 40/50 degrees.

Depends on the engine load, coolant temperature, cab temperature, cab heater demand, ambient temperature over the radiator and the vehicle speed.
It’s pretty cold at the moment.

Normal driving flat bypass, Cab temp set just over half way, 0/4 degrees
