Missing rocker cover?

They are all cosmetic covers, on a Diesel they may make a few % reduction in the noise level but that’s it, the petrol engine is far quieter by nature.
You are far better off without a cover, if there is a leak etc you’ll see it. It’s one of the first things I remove and leave off when I buy a car.
Regarding what the parts are, that’s a bigger topic and unless you are going to maintain it I wouldn’t be concerned.
Nothing to worry about.
Thanks! Is this where you would access the spark plugs?

Yes, if you were maintaining it.
If you are not all you need to do is monitor the fluid levels according to the Owners Manual.

T6 engine covers don’t touch the engine they span from the front of the scuttle to the rear of the slam panel

I’ve had my 2018 Highline TSI from new and it has never had an engine cover.
However, it has just occurred to me that my son has recently bought himself a 2017 Golf GTI - so I should try his engine cover and see if it fits my van?

Thanks for your reply, I don't think your son's cover will fit but it's kind of you to try it!
