Keto in the campervan....

So here is a question that nI do not think has been asked....

As a diabetic (type 2) I try to follow a keto ish diet (not going for full ketosis just keeping the carbs as low as possible). What dishes do you knock up in the camper that I may be able to nick some ideas from?

Available cooking sources as follows

2 ring hob
BBQ
Air Fryer
Slow cooker
Wood stove oven
 
So I'm thinking....

Bacon, sausage, steak and chicken mixed grill.

For breakfast, lunch and dinner.

My brother does Keto stuff.. seems to be what we have for dinner, just minus the carbs.

In more serious conversation I suspect it's not so much the cooking it's the storage, with a lot of low carb being meat and green veg.

I'm a great fan of batch cooking and freezing before a trip to extend the run time of a fridge (and a small van is not ideal to cook rather than warm through in) - but don't forget the wonder old school technology that is tins having cooked a number of things on longer sailing trips when 12v fridges were a bit bobbins compared to today.

I also liked @Salty Spuds idea to just cook a bit more of your normal things in the week or two before and seal them in sous vide bags to make your own personal "heat in the bag" menu for the trip.

There’s no difference in what can be cooked at home or in / outside a van. The single downside is using valuable water to clean up afterwards if you are off grid, on a campsite it’s not a problem. The answer to cleaning up off grid is to increase the water storage.

So cleaning came up a few times.... I've rightly or wrongly been using these to get the heavy and sometimes more off camping stove. Best wipes I've used and multiple uses! Cuts through grease!

Apparently you can! - Was told by a friend.

Back to the washing up.... We always have some blue role, that works wonders cleaning up greasy fry up.... Unfortunately the Mrs like cremating stuff all the time, so it's hot soapy water and some soaking for us..... I'm known to be seen around the campsite wearing blue xl washing up gloves holding a dish matic.

Like I say multiple uses. That and Dettol wipes... Anything to hand sir!

Just word of warning. There's a red pack... One side is abrasive tho. Maybe a tad rough on the nether regions. For those delicate sods there is also a green pack I believe which are dog friendly....

Teflon coated pans, kitchen paper and to reduce water consumption off grid I use a spray bottle with a washing up / water mix. Most water is consumed getting the excessive amounts of washing up liquid off the plates etc.

Aldi proper zero fat, zero sugar Greek yoghurt, add ground flaxseed & a sprinkle of mixed seeds for a quick sustaining brekkie. Eat it straight out of the tub, lick the spoon clean, no washing up, job done.
Boil half a dozen eggs & stick them in the nooks & crannies in the fridge. Instant lunch.(celery salt is a game changer for boiled eggs)

Cleaning and storage are not always the main issue, however boredom is..... here is a good example of what I am looking for...

Almond flour shortbread cookies

These things are amazing and can be prepped and cooked in a small space with little cleanup needed. They can be baked in my oven, my airfryer and in an omnia if I had one....
