I’ve nailed the sauce. A friend has an allotment and we get loads of tomatoes off him. I very gently sauté plenty of garlic in a generous slug of olive oil, a pinch of dried chilli flakes and then chuck in the toms. Cook it all down very slowly over 2 or 3 hours, then put it through a sieve. I vac bag it into portions and freeze it.and the sauce
for 4x 300g
714g Matthews Cotswold Strong flour (if you have no local mill with flour >12g protein)
0.5g yeats (active dry)
464g water
20g sea salt
2h at room temperature, than 3 days in the fridge, ouot of the fridge at least 3h before you make pizza
Easy to work dough, if you have a bit more experience go with
694g flour to 486g water
Quick and easy with Mutti sauce (if you don´t cook your own) and ooni sliced pepperoni.

Re. Dough. I’ve tried the quick 6hr dough and the 48hr method, always with good flour, I’ve tried strong bread flour, Italian OO pizza flour etc. the quick method has had the best results. Each time I try the 48hr method, I end up with a lifeless paste texture that doesn’t rise & is heavy when cooked.

Idea was for daughter to buy me a simple birthday present - then use on next trip out (first trip with daughter and her young family).
They are in a tent - I suspect I will end up there and ‘they’ will be in the van.
Planned New Forest (NF) but NF have said ‘no wood burning / cooking ’ including pizza ovens - so defeats part of the objective.
