My drivers door mirror on my T6 likes to forget to fold and usually a gentle push upwards on the bottom of the mirror housing helps jog it's memory.

Have you reset one touch windows ? If you’ve disconnected the battery they need to be reset to get folding mirrors again

Oh one more issue I have is the wing mirrors now don’t fold in via long hold on the lock button. They will fold using the knob in the drivers door so it’s got to be the digital dash as they worked before I installed it.

If you don't have power folding mirrors your door/window modules won't support folding. It's a long long time since VW fitted wiring looms or parts that support optional extras. It's not hard to do but it isn't cheap unless you can pick up parts on ebay for sensible money
