Oh one more issue I have is the wing mirrors now don’t fold in via long hold on the lock button. They will fold using the knob in the drivers door so it’s got to be the digital dash as they worked before I installed it.

If you don't have power folding mirrors your door/window modules won't support folding. It's a long long time since VW fitted wiring looms or parts that support optional extras. It's not hard to do but it isn't cheap unless you can pick up parts on ebay for sensible money

Relearning auto-roll up function of your door windows should fix your issue. Next step would need to be to switch away from key button holding to one touch button press for mirror folding.

You could make your own to suite your own particular needs from silver bubble wrap. From a large home store B+Q sort of place or on line. You could add ties/fixing points mirror covers/ears or just fold some in the door jams. One point on the latter, just make a fold that exits the door jam...
