Inverter decisions - size matters - dimensions and Watts

Right, I have decided I was to fit an inverter. I originally wanted to continue with team blue for integration with the Cerbo GX.

However they are huge dimension wise and Im struggling to find a place I can fit one. So thinking about alternatives.

Even the Renogy 3000W inverter is a bit too big for where I was homing to put it.

So I was now thinking 2000W renogy. This will fit where I would like to go.

Now my thoughts are, would the Renogy 2000W inverter be able to run (not all at the same time) things like a smallish (1800W) induction hob; coffee machine; microwave; small kettle etc.
Priorities pretty much in that order. Or would I regret making a 3000W fit?

The alternative, would be an Ecoflow/Bluetti or similar. The disadvantage of these is that I wouldnt be carrying them round in the van all the time, so impromptu coffee breaks would need a bit more planning.

You should be fine with a 2kW inverter for the induction hob - doubt you'll ever need to run your hob at full chat - but what are the peak and constant loads of your other devices? Most inverters have a surge-rating that's double their constant rating, but they do get upset if you try to run them at that load for more than a few seconds.

Our kettle = 1400W

Toaster = 900W

Remoska = 400W

No problem for a 2kW Renogy.

This is my 2kW Renogy, fed direct from the Roamer Seatbase 230, with 2x 170A cables (each for +I've and -I've) that are as short as they possibly could be. The plug already plugged into it is just an extension lead to the socket installed in the cubby in the next picture. The mounted double socket you see is fed from the EHU/consumer under the bonnet. I can very easily switch from inverter to EHU, by simply moving that plug, with no risk of weird earthing shenanigans.

I can run our Dolce Gusto coffee pod machine (800w), a travel toaster or kettle (both 1kW), an oil rad (800w), an electric blanket (bout 160W)... obviously not all at once, but plan is to have an 800w microwave for heating up stuff too, as I don't want to do any smelly cooking in the van. If I want to cook on gas, I'll do it outside on the little portable stove I have - hence why no hob fitted. The Roamer is a beast and although expensive when I first got it, it's brilliant. Had the 12v fridge running from it permanently all through last summer too, and it hardly batted an eye, especially with pretty much daily driving, or at least every 2-3 days so always getting topped up by the Victron DC-DC. Plan to get solar eventually...
