Fire extinguisher

I carry one of these in all my cars, suitable for all types of fire including lithium.

Having used a powder extinguisher a few times, whilst yes it saves your pride and joy, you will spend the next few years trying to clear up the mess it makes.
Nice. Available widely - Costco, Halfords, Screwfix etc. (according to the website) and even in a stainless steel canister which looks great.
Screwfix even have the pan fire sachet on clearance. Having said that we barely use any oil when cooking (don’t deep fry stuff) and have never had a pan fire. Nice idea though - the sachet, not having no a pan fire.

The stainless steel looks cool, the good thing about that is you don't mind having it obvious. I have it on display in the footwell of a 1970s Corvette, and it doesn't look out of place.

Whatever you do, whatever type you buy, make it accessible.

Having been in a situation where I couldn't get to the fire extinguisher, it's not a nice place to be.

I was thinking mount it on the front of the double passenger seat base. The seat is on a swivel and when we’re travelling the extinguisher would be with us in the cab. When we camp we spin the seat and so the extinguisher would be with us in the living area.
If it’s at the handbrake side then either driver or passenger could reach it in travel mode and it would be near the sliding door in camp mode - you’re going to want to exit first and then consider fighting a fire.
