While I’m looking at upgrading my leisure battery to lithium, could I just buy a Bluetti (other brands are available) and plug in to my electric hook up on the van when off grid? Am I over simplifying this?

If you have a charger for the current lead / acid it probably won’t be compatible with the lithiumbattery, neither will some of the cables as a lithiumbattery max’ charge and discharge rate is much higher than a lead / acid.
That Sargent unit is for lead acid so the Victron with the ability to charge lithium too makes more sense long term, especially if your present leisure battery has carked and whether a new, more efficient, lithium Black Friday bargain/Christmas present is in the mix.
You're right there Wayne we have 300 ah lithium in our van with 200 watt renogy solar panel, 3000 watt inverter, 100 ah lithium in our trailer with 200 watt ecoworthy solar panel and 1000 inverter. Plus Jackery 1000 and another 200 watt of portable solar panels.
Yeah i know going 100/105Ah Lithium will pretty much double my capacity and the seat base batteries are fairly pricey. Would the Roamer 144 (or 160S4) be the largest 'normal' battery that would fit?
If you can find another spot in your van for leisure power then Renogy have got two 300Ah batteries at just over a grand currently, they're heated too apparently.

Technically you can provide they are they same chemistry and voltage. (Ie, two lithium batteries 12v one of 100ah and one of 50ah )
But the basic answer you will get is no. Leisure batterylithiums should be a matched pair from new.
A 100ah lithium will give you twice the power as a 100ah...

I made a bit of an error, I have started my electric install and as a result I've fully charged my new battery without a way to use the power. I wired up the only 2 LED spot lights I've got and left them on for a few hours but it hasn't made a dent.
Any way to use it up a bit faster? Or no need...

After a brief read I'm now thinking lithium may be overkill for my needs due to the expense. Do you have any idea what I would need to integrate a solar panel onto my van to top up a lead acid battery, rough ballpark cost? I'm thinking to upgrade to lithium is going to be at least a 1K investment?
