Any ideas on how to turn a T6.1 LWB 5 seater to a 6 seater or 7 whats the best way. I want to keep my Captain seats. Many thanks

Not sure what you mean, but...
the frame is built for 9 seats (3 for each row). I have in fact a 9-seater Kombi (German wording, would be probably a Shuttle in the UK), while I don't actually use the last row.

The second row has always at least one single seat ( i.e 2+1 or 1+1+1 ) near the sliding door that can be tilted or removed at all in order to access the third row.
So you can easily get to 2+2+3, providing that you have all the floor sockets installed for third row of seats. Otherwise you can buy and install them, it is some work, but some people has done that.
Same goes for the safety belts.

A special case is the Multivan T6 (I think is Caravelle in the UK) that has sliding guides for the rear seats where you can more flexibly arrange them.

Depending on what seat configuration you have currently on you papers you may need to get it approved by UK traffic authority (no idea which one) , your papers updated and your insurance too.

I bought mine as a 9 seat window van. Its was a bench / drivers up front, single and double in row two (like a kombi) and a triple bench in row 3.

SWMBO didnt like the double bench so that was swapped to a single captains seat in matching dark austin fabric.

We only need 6 seats occasionally so sold the triple bench along with the belts and got a single middle shuttle seat with an integral seat belt which clips into the same floor brackets as the triple in row 3.

These single seats are getting silly expensive now plus brackets and fitting could be over a grand.
 
I have a LWB Kombi T6.1 with two up front and three in the second row. I also have fixings in the third row so I can either put two further singles back there or the three seater bench. I alternate the seating depending on whom I’m carrying but the triple bench is very heavy!
 
There are plenty of companies that will turn a panel van into a kombi, I imagine some of them will also turn a kombi into a shuttle.

The forum favourite recommendation would be Bognor Motors, a long trip for you but always reviewed as top notch work and service.
