I built a stud wall at my sisters and allowed 3mm for the skim and the plasterers didnt comment and it skimmed up OK. Plasterboard comes in different thicknesses too.
Not sure I fully understand your question, nor am I a pro plasterer. But i did do a 16 week evening class and have done a house since. If I read you correctly there are a few plasterboard thicknesses. Check out Wickes for the range and choose. The plaster is supposed to be 2mm base layer then 1mm finishing. 3mm total. Hope that helps.

15mm there abouts, could get away with 13mm on door edge
Arc covers it anyway, try not to go more than 15mm as it could start rippling on thick areas
