2019 Black Edition (AUS) ICE upgrade

I'm in the process of trying to work out the best value for money but at the same time sounding too, upgrade from the woeful OEM VW 'Composition' head unit. Initially I'd preferred an in-dash solution but must admit i'm liking the Alpine Halo 9.
It is super important that i retain all the OEM controls and stuff like mic, parking sensors, steering wheel controls etc.
The questions I have are;

• Should I do head unit and speakers or just head unit to start with?
• Is the Halo9 as good as i'm reading?
• Which speakers should I change and what for
• Do I really need an under seat sub
• Is there such a thing as kits or bundles?

If i still lived in Essex I'd drive over to Absolut5 but thats not possible for me now i'm in AU......
